Dom Pérignon uses the word 'Plénitude' to describe the moment at which a Champagne reaches its radiant apex - a window that occurs three times during the wine's life. The second Plénitude, or P2, as it's labelled here, occurs upwards of 15 years into maturation, the chef de cave carefully monitors the wine, releasing it to customers only when the moment is right. For the 2003 vintage, this second Plénitude is now, so expect a tactile and vibrant wine that dances through floral and fruity notes towards the toasted, ashy minerality that defines Dom Pérignon.
