The soil used to grow grapes can often have as much impact on the flavour of the wine as the weather, fertiliser and fermentation process. The Montmains Chablis Premier Cru white wine from Samuel Billaud has been made from chardonnay grapes grown in Kimmeridgian limestone soil, a soil rich in fossilised oyster shells. Citrus fruits, green apple, white flowers and a note of salinity combine to create a vibrant palate with a strong structure and refreshing acidity.
